Veggie Soup

During the winter I make soup once a week, which varies depending on: what I have in the fridge, what's on sale, and what has been lacking in my diet.  This week I made a soup I get in a pre-packaged bag from the produce man at the swapmeet.  I know, it sounds weird, but it's totally good and good for you.  Here is what it contains:

Broccoli
Cabbage
Carrots
Squash
Garbanzo beans.

I added in some other stuff.
Onions
Garlic
Celery
Carrots
Thyme
Bay leaves
Turmeric
Salt
Pepper

I began by sauteing the onion on low.  When they become translucent, add the garlic and saute for one minute.  Keep stirring.  Add in the celery, carrots, and turmeric, salt and pepper.  Stir and cover.  Allow veggies to soften a bit, then add in pre-packaged bag of veggies, Bay leaf, Thyme and cover with water.  Bring to a boil and simmer for minutes.  Upon completion you can add cilantro leaves right into the pot and let the cilantro stew a little before serving.  Squeeze of lime is delicious in this right before eating.

Enjoy with a side of toast, cornbread, or biscuit.  Perfect on those cold rainy days.
