Since discovering how to make veggie patties I have customized them with ingredients that I love. This recipe I used some zucchini I had leftover in the fridge. Hope you try and make them. 1/2 c. quinoa 1 can of blk beans 1 onion 2 garlic cloves 1 c. Breadcrumbs 1 lg. zucchini-grated 1 lemon - zest and juice 3 eggs Spices 1 tsp of cumin, coriander 1/2 tsp. turmeric, salt Cook quinoa according to directions. Sauté onions on low heat until they are soft. Add garlic, and spices and sauté for 1 min. Add zucchini and incorporate spices onto zucchini. Remove from heat and cool. In food processor add quinoa, beans, eggs, and lemon juice. Mix. Pour mix into a bowl and add onion mixture, lemon zest, breadcrumbs. Stir and mix together. Cook on griddle, frying pan for 8-10 min. each side. These can be frozen also. High protein, high veg, and super tasty!!!!!! Enjoy!'
