Minute Rice and Stir Fry

It's been a while since I've done a post on my recipes, so I am doing one which is sponsored by Minute Rice. I loved this rice...honestly. It works for me because it is done in 5 minutes and this pleases the toddler greatly. I began by pouring 2 cups of water into a pot, let it boil and then proceeded to add 2 cups of rice. I removed from heat and allowed to sit until the rice absorbed the water, which was when my toddlers first asked "is it done yet", to which I said, Yes, with eagerness. 
I then began with my stir fry. I began by sauteing the onion, then added big slices of tomato. I then added the green and red bell peppers, let them cook and get a little tender. I added pepper and salt, let it cook for a minute more. I then added in the mushrooms and garlic, covered, and let it cook.  No salt until after the mushrooms finished because salt makes mushrooms brown by drawing out the liquid. Once it was done I used the rice as a base, and topped with the yummy vegetables. I added some lime juice right on top and commenced eating. It was so yummy, and the rice was nice and soft, and tasty.  My daughter enjoyed it just as much as I did.
